Quick Healthy Snacks: for Mindful (But Busy!) Teachers (part 2 of 2)

In my last post, I mentioned a couple of so-called 'healthy' snacks I've stopped eating. As promised, here are my favorite healthy snacks.

Toss-It-Together Sweet and Salty Trail Mix

Of course, there are a lot of commercially-produced trail mixes available, but I prefer making it myself. It's fresher and I know exactly what's in it (without having yet another label to read). And it just takes a couple of minutes.

Step 1: Open a bag or two of your favorite dried fruit.

Step 2: Open a can or two of your favorite mixed nuts.

Step 3: Dump them into a large bag or bowl.

Step 4: Shake or stir.

Step 5: Divide into smaller containers.

Yep, it's that simple. I also sometimes like to add crumbled up pretzels and/or the darkest chocolate chips available.

Veg Out with Veggies

Do you know you should be eating more vegetables but find it hard to include them in every meal? (For me, it's easy at dinner, challenging at lunch, and nearly impossible at breakfast.)

Do you ever get "the munchies" and basically want to crunch something for the sake of crunching it? Or do you want something you can eat with one hand while correcting papers?

Well, how about killing two birds with one stone? ("Without actually killing any birds," as my grandmother would say.)

Just take a couple of minutes to cut up some carrot sticks or bell pepper strips. Then you can load up on vitamins rather than filling yourself with empty calories.
